Stuffed Peppers Ghouls

6 medium bell peppers -- assorted colors

12 oz ground beef
1 cup chopped onion
1 1/2 cups spaghetti sauce
1 tsp salt
16 oz canned black beans -- rinsed
2 cups cooked white rice
2/3 cup shredded Monterey jack cheese

Slice the tops off the peppers. Remove seeds from bottoms. Carefully carve out eyes and a mouth on each pepper. Place the cut out pieces into a pepper of a different color to fill in the faces.

Brown the ground beef and onion; drain off fat. Stir in spaghetti sauce, salt, beans, and rice. Fill pepper bottoms with mixture. Replace top slices. Place upright in a baking dish and top each pepper with cheese. Cover with foil and bake at 375F for 25-30 minutes.

Serves 6.
